On the menu, we thus find 100% French dishes with various veggies and vegan options, revisited in a personal way by the chef.

Emmanuel De Olivieira
Having trained with many renowned chefs, Emmanuel De Olivieira notably spent two years at the three-starred Sketch restaurant in London, where Pierre Gagnaire officiates.
Back in Paris, he continued his career at the La Réserve palace and then at the Hoxton where the chef took the lead of the kitchen teams.
Emmanuel De Olivieira is now an Executive Chef at the Renaissance Paris République,
where he creates contemporary local cuisine.

At the helm of the bar, mixologist Antoine Perro has designed
a completely new cocktail menu, with spices as a guiding line.
Star of the menu, the Bloody Mary is revisited
throughout the seasons (with butternut, bacon, mezcal…).
With homemade syrups and fresh condiments as ingredients,
the cocktails draw their inspiration from the best of nature.
And with each order, the bartender puts on a real show
to kick off the celebrations of an unforgettable evening.
